Remaining products are preserved and you are more aware of where products come from. This climate-friendly cooking reduces waste.

Hummus has been hugely popular for years, so it’s crazy that it took so long for a derivative to be produced. The ‘hummus shake’ trend started with The Hummus & Pita Co. chain in New York and will spread to other places. A simple milkshake, available in different flavors, that you can make at home from chickpeas, almond milk, dates, tahini, and banana. Totally in trend, because it is also gluten-free and vegan.

Replacing carbohydrates with vegetables, such as pizza dough made from cauliflower or spaghetti made from zucchini, may not be considered a ‘new trend’, but this movement is constantly evolving and we are seeing more and more offerings in this area. Matcha (green tea) powder gets competition. We are seeing more and more powder concentrates on vegetable products. They are not only used to give food an unnatural color in a natural manner but often also contain healthy nutrients. For example, the purple Acai berry from the Amazon, the bright yellow from turmeric and various powder concentrates from mushrooms.

Fermentation has been popular for years, but it is now becoming even more attractive by placing fermented products under the gut food label.
